Tile and grout are not waterproof. The thing that keeps water out of your framing is the waterproofing system underneath, and that is where most shower failures start. We build every wet area with a modern membrane system, sealed corners, and a properly sloped pan before a single tile goes up.
From there it is layout. Niches get centered on the tile, benches get pitched so water drains, and cuts get planned so you are not staring at a sliver of tile in the corner for the next twenty years.
